Healthy snacks are simple and fun! Today I’m going to show all you Dolls how just a couple of ingredients can make a wonderful summertime snack.
My Love Apple
Preparation Time: 2 minutes
Total Time: 5 minutes
Serves 1
Ingredients
1 organic tomato
6-10 fresh organic basil leaves
Directions
- Wash the tomato and basil leaves.
- Dry the tomato and basil leaves.
- Cut the tomato into slices.
- Place 1-3 basil leaves onto each tomato slice.
- Serve!

My Sweet Sundae Sunday is getting the shaft since I’ve been traveling around (just left Puerto Rico and am now in Park City, Utah) but all is good because my sister, Mrs. Honeybuns, is saving the day with her delicious Organic Peanut Butter Cookies. Thanks sis! Looks like there are two bakers in the family (no comment on who taught who).
Organic Peanut Butter Cookies
Preparation Time: 2 minutes
Total Time: 20 minutes
Makes a baker’s dozen
Ingredients
1 cup of raw organic peanut butter
1 cup of organic pure sugar cane
1 free-range egg
organic extra virgin olive oil
Directions
Preheat oven to 350 degrees
- Drizzle olive oil over a cooking sheet and spread evenly using a paper towel. Set aside.
- In a medium size bowl add the sugar, peanut butter and egg.
- Mix together with a wooden spoon until the ingredients are well blended.
- With a regular spoon scoop out the batter and place onto the cooking sheet (remember that there should be around a dozen cookies so don’t make the scoops too big).
- Place into the oven for 16-18 minutes.
- Take the cookies out and place onto a cooking rack for 3 minutes
- Serve!

Dolls, how much do you miss the sensational Spice Girls? Here is my Spice Girls inspired corn recipe.
‘Spice up your life’ Corn
Preparation Time: 13 minutes
Total Time: 20 minutes
Serves 4
Ingredients
5 already cooked, organic, corn on the cob
1/2 organic red onion
1/2 organic orange bell pepper
3 cloves of organic garlic
2 tablespoons fresh parsley
2 tablespoons of fresh dill
2 tablespoons of fresh basil
organic extra virgin olive oil
Directions
- Cut the corn off the cob Set aside.
- Dice the red onion. Set aside.
- Chop up the orange bell pepper. Set aside.
- Mince the cloves of garlic. Set aside.
- Dice up the parsley, dill and basil. Set aside.
- In a small sauce pan add a small amount of olive oil to saute the red onions.
- Once the onion start to brown add the corn, orange bell pepper, and garlic to the sauce pan.
- Mix together and add the parsley, dill and basil.
- Cook all the ingredients for about 3 minutes, stirring every 30 seconds.
- Serve.

A much needed drink was in order yesterday afternoon with the scattered thunderstorms in Puerto Rico which kept me at the hotel bar. I looked at the cocktail list and ordered the “Heaven” drink. The bartender, Manuel, looked at me and smiled. He than said, “I think you’d rather sin.”
“Well, of course! I do like to live a vibrant life” I replied.
He than pointed to the menu and showed me the available “Sin” cocktail. I smiled and agreed to try it. Who would have thought sin could taste so heavenly.
Sin
Makes one cocktail
Ingredients
2 ounces of Van Gogh Vodka
2 ounces of Grand Marnier
1 ounce of passion fruit
1 ounce of fresh lime juice
1 maraschino cherry
Directions
- Fill a martini glass with ice and add seltzer water. Set aside.
- Fill a stainless steal shaker full of ice.
- Pour the Van Gogh Vodka, Grand Marnier, passion fruit and fresh lime juice into the stainless steal shaker.
- Place a top on the shaker.
- Shake until the stainless steal shaker becomes frosty.
- Pour the ice and seltzer water out of the martini glass (notice that the glass is nice and frosty).
- Place a maraschino cherry into the martini glass.
- Using a strainer for the stainless steal shaker, pour the mixture into the chilled martini glass.
- Serve.

Traveling is fun but it’s definitely hard to stay gluten-free while away. Thank goodness I remembered to pack some Gluten-free Mini Banana Bread for not only my sweet tooth but also for Dick’s.
Gluten Free Mini Banana Bread
Preparation Time: 10 minutes
Total: 45 minutes
Makes 12 muffins
Ingredients
2 cups of organic, gluten free, pure white rice flour
1 cup of organic sugar cane
1 1/2 teaspoons of baking powder (I prefer Hain Pure Foods Baking Powder, Sodium Free and Gluten Free)
1/2 teaspoon of baking soda (I prefer 365)
1/4 teaspoon of kosher salt
1/2 teaspoon of organic ground cinnamon
2 large organic eggs
4-5 large organic bananas that are starting to brown
1/2 cup of organic extra virgin olive oil
1 cup of organic raw walnuts (optional)
Directions
Preheat oven to 350 degrees
- Drizzle a bit of olive oil onto a piece of paper towel and rub it into each muffin cup. Set aside.
- Place all of the bananas into a bowl and mash up using a large fork. Set aside.
- Put the cup of walnuts into a zip lock and break up using a cooking mallot. Set aside.
- In a large bowl mix together all of the dry ingredients which include 2 cups of rice flour, 1 cup of sugar cane, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt and 1/2 teaspoon of ground cinnamon.
- In a medium bowl beat the two eggs.
- Add the mashed up bananas and 1/2 cup of extra virgin olive oil to the eggs and mix together.
- Add the egg/banana/olive oil mixture to the large bowl of dry ingredients. Mix well.
- Add the walnuts to the blended mixture. Mix well.
- Using a medium spoon, fill each muffin cup full.
- Place the muffin tray into the oven for 30 minutes.
- Let the muffins cool for at least 5 minutes ontop of a cooking rack.
Tip
Make sure to use the toothpick test on the muffins before placing them on the cooling rack.

Breakfast with Dick is a bit difficult without having access to an organic market but I came prepared. With this simple and healthy sweet breakfast you are sure to feel great and look fantastic Dolls. Health is wealth!
Sweet Toast
Preparation Time: 2 minutes
Total Time: 5 minutes
Serves 2
Ingredients
4 slices of Ezekiel 4:9 Cinnamon Raison Bread
flaxseed oil (I suggest Spectrum’s Organic, Original Flax Oil)
1 teaspoon of organic grounded cinnamon
20 organic and raw almonds
Directions
- Place the 4 slices of bread into a toaster.
- Toast for 2 1/2 to 3/1/2 minutes depending on taste.
- Place toast on a plate.
- Cut toast into halves.
- Drizzle the flaxseed oil over each piece of toast.
- Sprinkle the cinnamon over each slice of toast.
- Carefully place each almond onto the toast.
- Serve!

When Dick first invited me to a get-away to Puerto Rico I figured that he was in dire need of some fun in the sun like me. Turns out that not only does he not enjoy being in the sun but he also does not swim. Well, I think he may have picked the wrong location to travel to but at least we are staying at a gorgeous four star hotel on the ocean. First class all the way!
As a fabulous guest I decided to turn this trip around and booked the two of us for a day trip trekking through the rainforest. Well, long behold I now realize the definition of rainforest. Let’s just say Dick wasn’t the only one who got wet.
