Love is in the air…or I am one of the many New Yorkers who is extremely excited to finely have a beautiful day on our hands. It’s 60 degrees outside and I am one happy cookie. How did I start my day? With a wholesome, vegan, gluten-free breakfast, of course! I can’t send Dick on his way without a full tummy.

Love is in the Air

Preparation Time: 2 minutes

Total Time: 14 minutes

Serves 2

Ingredients

2 cups of water

1 cup of Old Fashioned Rolled Oats (gluten free, dairy free)

4 organic plums

2 tablespoons of organic extra virgin olive oil

1/2 cup of Vanilla Almond milk (optional)

Directions

Old Fashioned Rolled Oats

  1. Place 2 cups of water into a small pot overtop a medium flame.
  2. Bring to a boil.
  3. Add 1 cup of the oats to the boiling water.
  4. Stir.
  5. Turn the flame down.
  6. Set a time for 12 minutes.
  7. Stir every 3 minutes.
  8. After the 12 minutes is up, turn the stove off, place the top on the pot and let sit for 2 minutes.

Plums

  1. Wash and dry the plums.
  2. Cut the plums into halves.
  3. Remove the pits and chuck them.
  4. Slice each half into fourths. Set aside.
  5. Place a medium sauce pan overtop a light flame.
  6. Add 2 tablespoons of olive oil.
  7. Allow the sauce pan to heat up for 1 minute.
  8. Add the plum slices to the sauce pan.
  9. Every 2 minutes stir and flip the plums.
  10. Saute the plums for 6 minutes.

Love is in the Air

  1. Place the cook oats into two bowls
  2. Add the cooked plums overtop the oats using a spoon to make sure to get all the fresh juices.
  3. Add 1/4 cup of vanilla almond milk to each bowl (optional).
  4. Serve!

Whoops! With all my time and energy being put into, well, me, I’ve completely forgotten about Dick (kinda sorta;-). Dick is starving and seriously wanting…breakfast! Let’s kick start this year with a nice healthy breakfast.

Sunny Hilltop Eggs

Preparation Time: 5 minutes

Total Time: 10 minutes

Serves 1

Ingredients

2 organic, free-range eggs

1 tablespoon of organic extra virgin olive oil

12 organic asparagus

Organic Flaxseed Oil (optional)

Directions

Asparagus

  1. Fill a steaming pot with about 2 inches of water.
  2. Place the top onto the pot and turn the stove top on high (bringing the water to a boil).
  3. Snap the ends of the asparagus off.
  4. Strip the tiny scales off the stems of the asparagus by using a paring knife.
  5. Rinse the asparagus in cold water.
  6. Place the asparagus into the steaming pot.
  7. Cook for five minutes.
  8. Place the asparagus onto a plate.

Eggs

  1. Put 1 tablespoon of olive oil into a small saucepan.
  2. Turn the second stovetop (which is below the saucepan) on to a medium flame.
  3. Move the saucepan so that the entire pan is covered in olive oil (add more if need be).
  4. Crack 2 eggs into the saucepan.
  5. Place a top over the saucepan.
  6. Cook for 5 minutes.
  7. With a spatula, slowing tip the saucepan and slide the sunny side up eggs onto the steamed asparagus.
  8. Drizzle flaxseed oil overtop both the eggs and asparagus (optional).
  9. Serve!

Breakfast can be boring with the same old eggs and toast so why don’t we put the south back into our mornings with collard greens. My sauteed collard greens go great with medium sunny side up eggs (just the way I like them) and Dick!

Breakfast Collard Greens

Preparation Time: 5 minutes

Total Time: 15 minutes

Serves 4

Ingredients

8 cups of organic collard greens

2 organic vidalia onions (about 1 cup)

4 cloves of organic garlic

4 tablespoons of organic extra virgin olive oil

Directions

  1. Peel the onions.
  2. Chop the onions. Set aside.
  3. Mince the garlic. Set aside.
  4. Wash and dry the collard greens.
  5. Chop the collard greens. Set aside.
  6. Add 3 tablespoon of olive oil to a large sauce pan over a medium fire.
  7. Add the chopped onions to the olive oil.
  8. Saute the onion for about 4 minutes.
  9. Add 1 more tablespoon of olive oil to the sauce pan.
  10. Add the minced garlic to the onions and olive oil.
  11. Saute for 1 more minute.
  12. Add the collard green to the olive oil, onions and garlic.
  13. Every minute flip  the collard green so that the all of the ingredients are being rotated in the sauce pan.
  14. Saute for 10 minutes.
  15. Serve!

Breakfast Collard Greens

After a very interesting email I received from a loyal reader I decided to take  his requests into consideration and am going to please him with…cereal. Breakfast with Dick may have just became a little bit easier. My Granola Apple Crunch can be used as a sweet snack, a wonderful breakfast cereal or a fun topping for fruit. I hope this is satisfying Dick.

Granola Apple Crunch

Preparation Time: 5 minutes

Total Time: 30 minutes

Serves 10

Ingredients

3 cups of organic, gluten-free, old fashioned rolled oats

1/4 cup of organic brown sugar

1 tablespoon of organic cinnamon

1/3 cup of organic, raw honey

1/4 cup of organic extra virgin olive oil

1 teaspoon of almond extract

1 cup of raw almonds

3 organic pink lady apples

Directions

Preheat oven to 300 degrees.

  1. Place parchment paper over a baking sheet. Set aside.
  2. Place the 3 cups of oats, 1/4 cup of brown sugar and 1 tablespoon of cinnamon into a large bowl. Blend together using your hands. Set aside.
  3. Place 1/3 cup of honey, 1/4 cup of olive oil and 1 teaspoon of almond extract into a small bowl and mix together. Set aside.
  4. Peel the 3 apples.
  5. Grate the 3 apples by using a hand grater (cheese grated ).
  6. Add the freshly grated apples to the dry ingredients in the large bowl and mix together using your hands.
  7. Add half of the wet ingredients to the large bowl and continue to mix together using your hands.
  8. Add the cup of raw almonds to the large bowl.
  9. Pour the rest of the wet ingredients into the large bowl and mix together one last time using your hands.
  10. Spread the mixture evenly onto the parchment paper.
  11. Place the baking sheet into the oven.
  12. Bake for 20 minutes.
  13. Pull the baking sheet out of the oven.
  14. Allow to cool.
  15. Serve!

Breakfast with Dick is a bit difficult without having access to an organic market but I came prepared. With this simple and healthy sweet breakfast you are sure to feel great and look fantastic Dolls. Health is wealth!

Sweet Toast

Preparation Time: 2 minutes

Total Time: 5 minutes

Serves 2

Ingredients

4 slices of Ezekiel 4:9 Cinnamon Raison Bread

flaxseed oil (I suggest Spectrum’s Organic, Original Flax Oil)

1 teaspoon of organic grounded cinnamon

20 organic and raw almonds

Directions

  1. Place the 4 slices of bread into a toaster.
  2. Toast for 2 1/2 to 3/1/2 minutes depending on taste.
  3. Place toast on a plate.
  4. Cut toast into halves.
  5. Drizzle the flaxseed oil over each piece of toast.
  6. Sprinkle the cinnamon over each slice of toast.
  7. Carefully place each almond onto the toast.
  8. Serve!
